I am the one that prepares the meal for our fellowship after Shabbat service...so I'm preparing Vegetarian Chili for tomorrow...they look forward to what I'm going to cook...that's my contribution to the ministry. We have decided that we all are going to begin a more vegetarian diet...in scripture the only time meat was really eating was for Feast days and special occasions. I have decided that my family will refrain from eating meat everyday like we have been taught to do. We acquired that habit from our captors...and it's killing us as a people...they have read the eth-Cepher (bible) also...and they have conspired against Yisra'el...when you know better...you do better. If you have any vegetarian recipes....PLEASE SHARE THEM!!!! ALL PRAISES TO THE MOST HIGH!!!!

  

INGREDIENTS

    • 3 tablespoons olive oil
    • 1 large onion, coarsely chopped
    • 6 large garlic cloves, chopped
    • 3 14 1/2-ounce cans diced tomatoes in juice
    • 1 4-ounce can diced mild green chilies
    • 3 tablespoons chili powder
    • 1 tablespoon ground cumin
    • 1 tablespoon dried oregano
    • 2 15- to 16-ounce cans kidney beans, drained
    • 2 green bell peppers, cut into 1/2-inch piece 
    •           PREPARATION
    1. Heat oil in heavy large pot over medium-high heat. Add onion and garlic; sauté 5 minutes. Add tomatoes with juices, green chilies, chili powder, cumin and oregano. Cook 10 minutes to blend flavors.

    1.  Add beans. Reduce heat to medium-low and simmer until chili is thick, stirring occasionally, about 35 minutes. Season to taste with salt and pepper.

Goes great with homemade cornbread!!!
